Attack determines how fast the compression effect kicks it. On a low setting the signal is squashed fast to give a very country sounding vibe. Set it high and the compressor works more organically with the player, assisting in leveling out notes and making your playing simply sound better.
When compressing a signal, volume loss is usually the number 1 side effect. The level control is there to balance out the sustain control so you can find a sweet spot between the two.
